Agavero Grill & Cantina: Authentic Mexican Cuisine in Collinsville

The place was super busy, we were seated quickly and got our drinks in good time. They have an awesome menu with lots of great food selections! Our tacos were brought out in a timely fashion and were prepared perfectly. Everything was delicious, we will be back to try some more things from the menu!

THE BEST CHIPS & SALSA I EVER HAD! Our waiter Melvin was very attentive to our needs! I had the steak/chicken fajitas with corn tortillas, rice, and beans and it was delicious! Portion sizes were generous! We arrived at opening and was seated immediately! Great selections for the kids menu as well!

Food here is always delicious service is always great. Waiters and waitress are super friendly and always have smiles on their faces. Highly recommend not to forget to mention the Margaritas are the best around.

Located very close to the interstate- this cantina offers quick service and good food. We had no wait to get a seat, but the place was fairly busy. The food came out relatively quickly and was hot and fresh. Everything tasted great and the portions were fairly sizable. Definitely recommend if you are near that area, good for families and friends. There is nice bar area if you want to sit and watch a game or two.

This place has great food and drinks. Their Pollo Sinalor is amazing if you wanna stay on the lighter side of their menu. We were lucky to be there on a night they had Karaoke and the show was a lot of fun. Our server and the karaoke host guy were very charismatic to all of our family members. We all sang a few songs and had a blast.

I’ve eaten my fair share of tacos across the country, but nothing prepared me for the sheer excellence I experienced at Agavero. From the moment we walked in, the warm, unpretentious atmosphere and the smell of slow-cooked meats told us we were in for something special. The birria tacos are, without question, the best I’ve ever had. Tender, juicy meat that practically melts in your mouth, bathed in a rich, deeply flavored consomé that’s layered with spice and soul. Dipping each bite into that consomé felt like a religious experience – perfectly balanced, not too salty, with just the right kick of chile. My wife and I looked at each other after the first bite and just said, “Wow.” And then came the cornbread. One bite, and I was instantly transported back 24 years to my Abuelas dinner table. Somehow, they’ve captured that exact homemade texture and flavor slightly sweet, with that unmistakable fresh-corn taste that store-bought versions never get right. It was pure nostalgia on a plate, and I almost got emotional eating it. Everything about this meal screamed authenticity without feeling performative. The flavors are bold yet perfectly balanced, made with obvious care and respect for tradition. Agavero isn’t just a restaurant – it’s now an official scheduled stop on every future cross-country road trip. If you’re anywhere near this place, do yourself a favor and go. You’ll leave happy, full, and already planning your next visit. Highly, highly recommended.

Very good food. Large servings; enough for two meals. Salsa and chips served free. Salsa verde is also very tasty. Waitress did a good job explaining everything.
